Creamy Pasta with Cajun Smoked Sausage

Ingredients

  • 12 ounces fettuccine
  • tablespoon oil
  • 1# Winner’s Cajun Smoked Sausage
  • red bell pepper
  • yellow bell pepper
  • 1/2 red onion
  • 2 teaspoons Cajun seasoning 
  • tablespoon butter
  • cloves garlic minced
  • tablespoons flour
  • 1cup chicken broth
  • 1/2cup half and half cream
  • 1-15 ounce can diced tomatoes, drained

 

Instructions

  1. Cook pasta according to package.
  2. Reserve 1 cup of the pasta water before draining.
  3. Heat oil in a large skillet over medium-high heat.
  4. Add the sausage, peppers, and onion.
  5. Remove from the pan onto a plate.
  6. Place the butter in the pan to melt.
  7. Sauté garlic for 30 seconds or until fragrant.
  8. Mix in the flour and cook for 2 minutes.
  9. Whisk in the chicken broth, cream, & 1-2 teaspoons Cajun seasoning
  10. Stir in the tomatoes and cook until thickened (about 2-3 minutes).
  11. Mix the sauce in with the pasta.
  12. Add pasta water as needed to achieve desired consistency.
  13. Add the sausage and veggies and toss until combined.
